1. Combine 1 c lactose-free milk (LF dairy milk or non-dairy milk such as unsweetened almond milk both work well), ¼ cup chia seeds, 1 tsp vanilla extract & 1-2 tsp pure maple syrup, mixing well. (makes 2 servings) 
  2. Cover and refrigerate overnight 
  3. Scoop out half of the pudding into a bowl. Top with chopped walnuts, ⅓ banana & a sprinkle of cinnamon
